What’s the story behind the name?
There hasn’t been slaughtering facilities in Defereggen Valley for many years. For this reason, two farmers thought about how to go about changing this and the idea of the "Deferegger Qualitätsfleisch OG" came into fruition. In September 2021, after a long planning phase, ground was broken for the construction phase of a new butcher shop on our farm.
In September 2022, the butcher shop opened its doors after only a year after construction started. Our primary goal with our own butchery is to ensure our animals receive the best possible treatment right to the end. We mainly slaughter our own animals on site; if necessary, we also buy animals from the region and market them directly via the farm store or sell them to local restaurants.
Thanks to the short transportation routes and life under organic standards, the animals experience no stress when they arrive for slaughter. In our case, the cattle can simply be led across the road and are therefore not exposed to any stress during loading or long transportation. If the animals do have to be taken to the butchery by car and trailer, they have a good hour after unloading to relax and relieve the stress before they are slaughtered.
We give the meat the time it needs to mature in our storage rooms and curing chamber. This enables us to deliver the highest possible quality that one can taste. We are delighted when we establish regular customers, and they almost always ultimately recommend us to other friends and people they know.
We offer a wide range of various sausages (e.g. house sausage, Zirbenhaus (Swiss Pine) sausage, garlic sausage, various salamis, lamb sausage, blood and liver sausage, etc.), as well as various smoked meats such as pancetta or bacon in a Zirben (Swiss Pine) casing. Minced meat, onion mince, various types of ham as well as extra sausage and extra piquant are also part of our repertoire. In addition to our organic quality, we also offer conventional meat products.
Our guests enjoy daily fresh products from the butchery in the farm store. Of course we are happy to fulfil special requests. Be it for a barbecue or when a birthday is coming up and cold sausage and cheese platters are needed, we are happy to oblige! Our products are of course available in the farm store. A few selected restaurants are also among our customers.
